Spending the day munching on Christmas cake while dreaming of your own wedding cake's style and flavours? Help is at hand – we sat down for a chat with Simon Spencer-Harvey from Candy & Grim Cakes to find out about their amazing creations…

How did you get into the wedding cake industry?
"Candy and Grim Cakes was launched following winning first, second and third prize in a local 'Bake-off' charity competition in 2015, for each of our three cake entries. This included the world's first 3D projection mapped cake sculpture, a miniature tradition floral butter cream celebration cake and a sophisticated tempered chocolate cake. We were inundated with positive feedback from judges and competitors alike, and started to seriously consider offering our services professionally. Although our first ever wedding cake commission was for something completely different, a mad-hatter's tea party cake sculpture, featuring the cat and the caterpillar as the bride and groom!"

What do you love most about your job?
"We are all about the challenge, and pushing the boundaries. Creating bespoke wedding cakes really allows us to pull out all the stops and make a grand statement on behalf of our clients."

What do you love the most about living in the North East?
"It has everything we need, and just around the corner. From moors to beaches, not to mention a wide variety of venues. My partner and I consider ourselves very lucky to live and work in the region."

What are the trends for wedding cakes for 2019?
"Traditionally we are asked for either a Disney-like projection mapped princess cake or a luxury floral/baroque style cake, however more recently we are getting asked for Harry Potter and Game of Thrones cakes. Which considering the number of large halls and castles we have in the North East is a very good fit!"
